My Spring "Wants"

1 // I need...err..i want another white shorts, I've got one but for some reason it shrunk on me, lol! 
   { i promise - the shorts shrunk, not me getting big} bahaha

Guest Post: Anne of The Pink Momma

Hello everyone! My name is Anne and I'm coming over from The Pink Momma. I'm a stay-at-home Mom to my baby girl and she's 14 months old. She's my world and she's my mini me. One of my passion is baking. I do make cakes, cookies, cupcakes, you name it and I can bake it! I'm also a freelance cake decorator. I will share a recipe of one of my favorite cupcake, strawberry cupcakes. I love strawberries and anything with strawberries. Yum!


{Strawberry Cupcakes with Swiss Meringue Buttercream}

FOR CUPCAKES:

Ingredients:
  • 2/3 cup whole fresh or frozen strawberries, thawed
  • 1 1/2 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/4 teaspoon coarse salt
  • 1/4 cup whole milk, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup sugar
  • 1 large egg, room temperature
  • 2 large egg whites, room temperature
Directions:
  1. Preheat oven to 350 degrees. Line a 12-cup muffin tin with cupcake liners; set aside.
  2. Place strawberries in a small food processor; process until pureed. You should have about 1/3 cup of puree, add a few more strawberries if necessary or save any extra puree for frosting; set aside.
  3. In a medium bowl, whisk together flour, baking powder, and salt; set aside. In a small bowl, mix together milk, vanilla, and strawberry puree; set aside.
  4. In the bowl of an electric mixer fitted with the paddle attachment, cream butter on medium-high speed, until light and fluffy. Gradually add sugar and continue to beat until well combined and fluffy. Reduce the mixer speed to medium and slowly add egg and egg whites until just blended.
  5. With the mixer on low, slowly add half the flour mixture; mix until just blended. Add the milk mixture; mix until just blended. Slowly add remaining flour mixture, scraping down sides of the bowl with a spatula, as necessary, until just blended.
  6. Divide batter evenly among prepared muffin cups. Transfer muffin tin to oven and bake until tops are just dry to the touch, 22 to 25 minutes. Transfer muffin tin to a wire rack and let cupcakes cool completely in tin before icing.
FOR FROSTING:

Ingredients:
  • 2 1/2 cups sugar
  • 10 large egg whites
  • 4 cups (8 sticks or 2 pounds) unsalted butter, cut into pieces
  • 2 teaspoons pure vanilla extract
Directions:
  1. Place sugar and egg whites in the heat-proof bowl of an electric mixer. Set bowl over a pan of gently simmering water, and whisk until sugar has dissolved and egg whites are hot to the touch, about 3 minutes. Test by rubbing the mixture between your fingers; it should feel completely smooth.
  2. Transfer bowl to mixer stand. Using the whisk attachment, beat on high speed until mixture has cooled completely and formed stiff and glossy peaks, about 10 minutes.
  3. Add the butter, one piece at a time, and beat until incorporated after each addition. Don't worry if the buttercream appears curdled after all the butter has been added; it will become smooth again with continued beating. Add vanilla, and beat just until combined.
  4. Switch to the paddle attachment, and beat on the lowest speed to eliminate any air pockets, about 5 minutes. If using buttercream within several hours, cover bowl with plastic wrap, and set aside at room temperature in a cool environment. Or transfer to an airtight container, and store in the refrigerator, up to 3 days. Before using, bring buttercream to room temperature, and beat on the lowest speed with the paddle attachment until smooth, about 5 minutes.

Not your regular "shoe organizer"

As part of my spring cleaning, I have been organizing my childrens' clothes.  
My boy and girl share this small closet and one of the things that I did to maximize the space, is I've used an over the door shoe organizer for some of their clothes.

I rolled my son's basketball shorts and short pants & insert it in the shoe organizer pockets.

On the other door of the closet, I rolled my daughter's sleeping clothes & some stockings and inserted it in the shoe organizer pockets.
I'm glad I did this because I've got more space that I can work on to organize their other clothes.
I don't think I will be ever "finish" organizing their clothes...
Because when I thought I was done, then it's time to purge outgrown clothes again...
Gosh, my kids just grow so fast - I'm having trouble keeping up L

1) I am a native from the Philippines - we are called "Filipinos"

2) I'm a mountain dew drinker - the regular one, coz it's the "real thing".

3) I hate doing the dishes but since I hate looking at it on the sink uncleaned, so I do dishes.

4) I wear socks {fluffy ones} at home all year through - my feet tends to get cold.

5) I love saying "awesome" because it's just awesome to say awesome!

6) I love PINK - and the song "perfect"

7) My boyfriend is Channing Tatum and my husband's cool with this...lol!

8) I love the look of a freshly-vacuumed carpet or a freshly-mowed grass.

I do read a lot of blogs everyday and I think it would be proper not to mention any favorites publicly. Let's just say, I stop by at blogs that are about organizing, home decor, fashion and some kidstuff along the way too.  And then since I've gain friends in the blogland, I also to stop by to read the stories of their lives.

2) If you could live anywhere, where would it be?
Uhmm...somewhere near the ocean or the beach.  My husband and I love being in the beach and my kids too.

DEFINITELY BEACH

Filipino Food- like eskabeche, humba, lumpiang shanghai and pancit!

Yes - 2

So What If Google Reader Shuts Down?{plus bloglovin tutorial}

Okay, my friend Anne (thanks Anne for the info) told me today that Google Reader will shutdown and that it's all over the www.

So I searched and found the official article  from Google - and take note it is part of their spring cleaning and it's not just the Google Reader that they are shutting it down but there are more on the list, to read the full article - click here.

But DO NOT PANIC!

So What If Google Reader Shuts Down?  It is not the end of the world

There are a lot of alternatives that you can subscribe that is similar to Google Reader that are also RSS feed readers, one of these is BlogLovin.  In fact, when you search the www with "rss feed readers" it will give you a whole new hope.

Take note, Anne told me that she is already on bloglovin and I decided to go for it since it has a pretty good feedback and it looks user-friendly.
